Fancy Honey Roast Parsnips

Sweet, golden, and caramelised to perfection, honey-roast parsnips are a comforting and elegant addition to any roast.
Roasted in goose fat, simple yet irresistible, honey-roast parsnips bring warmth, colour, and indulgence to the table.
Ingredients
500g parsnips
2 tbsp of goose fat
1 tbsp honey
4 sprigs of thyme
A pinch of salt
Method

Preheat the oven to 200°C / 180°C fan / Gas 6.

Peel and cut the parsnips in half lengthways, quartering any larger ones.

Place the parsnips in a large bowl, season with salt, and toss with honey.

Arrange the parsnips on a baking tray and add 2 tbsp of goose fat. Place the tray in the oven for 5 minutes, or until the fat has melted and is hot. Remove the tray and baste the parsnips with the goose fat.

Roast for 50 minutes, or until tender, caramelised, and crisp, basting with the fat every 15 minutes.
