Golden, crunchy, and richly flavoured, these crispy roasted potatoes are transformed by Fancy Fat.

Goose fat lends a savoury depth that delivers a golden, crispy crust and a light, fluffy interior.

Simple to make yet impossible to resist!


Ingredients

1kg Maris Piper potatoes

5 tbsp of goose fat (can use duck or Wagyu beef fat)

1 tsp salt (for boiling water)

Sea salt flakes (to serve)

Optional: cracked black pepper, 2 cloves of crushed garlic, sage or rosemary

Method

  1. Preheat oven to 220°C / 200°C fan / Gas 7.

  2. Peel and cut potatoes into even chunks (approximately 5cm in diameter).

  3. Parboil potatoes. Place in a large pot of cold salted water, bring to a boil. Boil for 8–10 minutes, until just starting to soften. Drain well and leave to steam dry for 2–3 minutes.

  4. Shake the potatoes gently in the colander or toss them around in the pot to fluff up the edges (this helps crisping).

  5. Put fat into large roasting tray and place in the oven for 5 minutes or until fat is melted and hot.

  6. Add potatoes to the roasting tray with hot fat. Turn them so they’re coated on all sides.
    Optional: add garlic and herbs (sage or rosemary)

  7. Roast for 45–60 minutes, turning every 20 minutes, until golden and crispy.

  8. Season & Serve
    Sprinkle with salt and pepper to taste. Serve hot.
