Crisp on the edges, tender in the middle, Hasselback potatoes are a show-stopping twist on a classic roast potato.
Thinly sliced they allow duck fat to seep between the layers for a rich, savoury flavour and irresistible crunch.
These potatoes turn any meal into a feast for both the eyes and the palate.
Ingredients
1kg medium-sized Maris Piper potatoes
3 tbsp duck fat
4 garlic cloves (crushed)
1-2 sprigs of rosemary
Sea salt flakes
Cracked black pepper
Method

Pre-heat the oven to 200°C / 180°C fan / Gas 6.

Position chopsticks (or wooden spoons) on either side of the potato on the chopping board – this helps stop the knife from slicing all the way through.
Make thin slices about 3-5 mm apart. Cut vertically, from one end to the other, stopping before you cut all the way through – leave the bottom intact so the slices stay connected.

Place the potatoes cut-side up on a baking tray and add 3 tbsp of duck fat. Place the tray with potatoes in the oven for 5 minutes or until fat is melted and hot. Take the tray out and baste potatoes with duck fat. Add crushed garlic, rosemary, and season with salt and pepper.

Roast for 50 minutes, or until tender and the tops are golden and crisp. Baste with fat in the tray every 15 minutes.
