Golden, and rich in flavour, a fried egg takes on a new level of indulgence when cooked in duck fat.

Familiar yet elevated, this classic dish becomes a real treat for the taste buds, turning an everyday favourite into something extraordinary.


Ingredients

1 egg

½ tsp duck fat

5 spears of asparagus

1 slice of bread

Butter (to butter the bread)

Salt and pepper for seasoning

Optional: crispy onions and chilli flakes for garnish

Method

  1. Steam the asparagus for 3-4 minutes.

  2. Melt duck fat in a frying pan.

  3. When hot, crack in the egg and fry until the white is set but the yolk remains soft.

  4. Toast the bread, then spread with butter.

  5. Serve asparagus on toast and layer with egg.

  6. Season with salt and pepper.
    Optional: Sprinkle with crispy onions and chilli flakes.
