Juicy, tender, and bursting with flavour, this steak is elevated by cooking in rich Wagyu beef fat.
The savoury richness enhances the meat’s natural succulence, creating a sizzling golden crust that locks in every drop of flavour.
Perfectly caramelised on the outside and melt-in-the-mouth at the centre, this steak is pure indulgence for any meat lover.
Ingredients
2 sirloin steaks
1-2 tbsp of Wagyu beef fat
Sea salt flakes - to taste
Cracked black pepper - to taste
Optional: 1 clove of garlic, and/or sprig of thyme
Method

Take the steaks out of the fridge 30–60 minutes before cooking to bring them to room temperature. Pat dry with paper towels.

Smear steaks with Wagyu beef fat and season both sides with salt and pepper just before cooking.

Heat a heavy frying pan or cast iron skillet over high heat until very hot (just starting to smoke).

Lay steaks into the pan.
Adjust time for your preference. 2-3 minutes in total for rare (50°C in the middle), 4-5 minutes in total for medium (60°C in the middle) and 7-8 minutes for well done (70°C in the middle).
Optional:
Add garlic and herbs halfway through cooking after turning steak.
Tilt the pan and spoon the fat over the steaks for extra flavour. -
Transfer to a plate and rest for 5–10 minutes before serving to keep the steaks juicy.

Serve with chips, salad, vegetables, or a sauce such as peppercorn — or finish with a melting knob of Wagyu beef fat.
