Fancy Root Vegetable Medley

A vibrant, hearty celebration of earthy flavours, this root vegetable medley is elevated by the rich, savoury taste of duck fat.
Simply comforting, and full of natural sweetness, this dish brings warmth, colour, and a gourmet touch to any meal.
Ingredients
200g new potatoes
1 large or 2 medium parsnips
1 large or 2 medium carrots
1 large or 2 small red onions
2 tbsp duck fat
1-2 sprigs of rosemary
Sea salt flakes
Cracked black pepper
Method

Pre-heat the oven to 200°C / 180°C fan / Gas 6.

Peel vegetables, cut in halves or quarters. Leave new potatoes skin on.

Place the vegetables in a baking tray and add 2 tbsp of duck fat. Place the tray with vegetables and fat in the oven for 5 minutes or until fat has melted and hot. Take the tray out and baste vegetables with duck fat. Add rosemary.

Roast for 50 minutes, or until tender and the tops are golden. Baste with fat in the tray every 15 minutes.
