Fancy Yorkshire Puddings

Light, airy, and irresistibly golden, Yorkshire pudding is a classic British speciality that deserves its place at the heart of every traditional roast.

Elevate it further with luxurious Wagyu beef fat, adding rich savoury depth and an unforgettable flavour experience.


Ingredients

70g plain flour

2 large eggs

75ml whole milk

Pinch of salt

25g of Wagyu beef fat (for batter)

4-6 tsp of Wagyu beef fat (for tin)

Method

  1. For 4 large or 12 small.
    Make the batter. In a bowl, mix the flour and salt. Crack in the eggs and whisk. Heat milk and Wagyu beef fat to 50°C and slowly add to the mixture, whisking until smooth.

  2. Preheat oven to 230°C / 210°C fan / Gas 8.
    Put a small amount of fat (about 1 tsp in large and ½ tsp in small ) into each hole of a tin.
    Place the tin in the oven and heat until the fat is smoking hot (about 5–10 minutes).

  3. Carefully pour the batter into the hot fat (fill each hole about ⅓ to ½ full).

  4. Bake for 20–25 minutes. Do not open the oven during baking. The puddings should rise tall and turn golden brown. Serve immediately as they’re best enjoyed fresh, ideally alongside roast beef and plenty of gravy.
